Super Easy Breakfast Salad

Introduction

“Breakfast is most important meal of the day.”

Bullshit. But if you have 5 minutes and a few ingredients you can make yourself breakfast that won’t make you feel like a fat programmer, even if you add bacon.

This is something I try to do in the morning when I don’t want anything too heavy. It doesn’t take too long, is pretty easy to clean up, and doesn’t make you want to fall right asleep after eating it.

Ingredients:

  • 2 Eggs
  • 2x tsp Mayo
  • Dash of Salt, Pepper and Worcestershire Sauce
  • A handful of fresh-picked mixed greens (from the garden in my case)
  • Diced Tomatos
  • Sprouts
  • Salad Dressing OR
  • Olive Oil, Balsamic Vinegar and Herbs de Provence

Eggs.

Find a mixing bowl or something. Crack the 2 eggs in it. Throw the shells in for extra texture (don’t actually do this). Add the mayo (trust me on this), salt, pepper, and Worcestershire sauce. Maybe some Tabasco if you’re feeling hawt and spicy.

Now whip the shit out of it –  like go crazy. I use a fork but it’s only because I’m too lazy to go out and buy a tiny whisk. Whip it so hard that it looks fluffy – then your fluff will transfer to tasty, fluffy scrambled eggs.

Scramble the eggs.

Salad.

While the eggs are cooking (don’t overcook them), throw some lettuce in a bowl, dice the tomato and throw that in too. When the eggs are done, throw those on top, add the sprouts, and put some fucking dressing on it.

If you want to be a nerd go find some bacon to crisp up, chop, and throw on top of the salad.

But wait, I saw bread.

Yeah, I think english muffins trump toast by far but really all you have to do is grab your bread of choice, throw it in the toaster, and then when it’s done put some stuff on top of it. I like a little bit of butter and strawberry jam (it goes well with the “dressing” we made).

 

Bam. Breakfast.
