Julien’s 😲 Sauce

Introduction

The Carolina Reaper is the hottest pepper in the world.

With a Scoville Rating of up to 2.2million, this pepper is no joke. This year, my mother bought me a bunch of pepper plants from the local farmer’s market, and the Reaper is one of the happiest pepper plants I have in my pepper bed. For those who didn’t know, I love spicy food. During the summer, when my plants are doing their best, I eat about a habanero every/every other day, and I have about 15 hot sauces in my pantry/fridge at any given time (and yes I still love Huy Fong’s Sriracha).

 

I made a hot sauce. And it’s actually really good.

I’ve always wanted to make my own hot sauce, so the other day when I realized I had more peppers than I knew what to do with, I decided it was time to give it a try.

After making it, and letting it cool down, I tried it. Yum! Everyone else said while it was really, really spicy, it had really good flavor. (It’s actually less spicy than we thought it was going to be, but still, for your first taste try just a tiny bit)

I don’t actually know where to get Carolina Reapers, but if you can manage to find some, or grow your own, I’m sharing the recipe, and it’s actually pretty easy!

 

Lets do this thing:

*** Please keep in mind you should make sure there is proper ventilation in your kitchen/workspace and you’re using eye/hand protection. When blending, it is especially important that you cover the blender and also not to breath in the fumes as they could burn your esophagus! Finally, for the love of God, please don’t touch your junk. I assume no responsibility for people being stupid while making or consuming this sauce. ***

Ingredients (this makes about a pint and a half):

  • 3 Carolina Reapers
  • 7-10 Habaneros
  • 2-5 Red Jalapeños
  • 1.5 – 2 tbsp apple cider vinegar
  • 1 can diced tomatoes (I used garlic & onion flavor)
  • 1 can V8 juice
  • 1/2 medium white onion
  • 3-5 cloves of garlic, roughly chopped

Directions:

  • Remove stems of peppers, remove seeds if you’re a wimp
  • Add v8, diced tomatoes, apple cider vinegar, diced onion and garlic to a medium pot on med-high
  • Once mixture in pot is hot, add all peppers
  • Cover pot and let sit for 20-30 minutes, stirring occasionally
  • At this point, the sauce is good, but I like my sauce a little thicker, so I let it reduce (take the lid off the pot) for about 10-15 minutes to a thicker consistency (remember, blending will make it even thicker)
  • When you’re happy with the consistency, transfer mixture to a blender and blend very well, OR, use an immersion blender in the pot and blend to the desired consistency
